Seems obvious, but it may fool you. Too big, and your food will dry out, too small, and you won’t be able to cook enough for everyone. As a general rule of thumb, look for casseroles between 16-20 for 1-3 people, 20-26cm for 4-6 people, or 28cm and up for hearty appetites or hungry crowds.
Capacity
This will vary depending on whether you get a casserole that has high sides, or is shallower. Each style of casserole dish has specific cooking purposes, and the wall height is a reflection on this. Deep sided dishes, known as Dutch ovens, are better for stews, wetter casseroles or braises, or dishes that need a build up of steam. Shallow ‘casserole’ dishes are more suited to roasting, drier casseroles, gratins, or slow-roasts.
