Spatulas are one of those cooking utensils that you just don’t appreciate until you buy a set and then you find yourself using them all the time. Most modern spatulas are made of silicone with a reinforced stainless steel inner core although you can also buy plastic version.

Design
Spatulas are fairly universal in design but spatula sets tend to contain other utensils which are a variation on the spatula theme. A flexible silicone knife is one to look out for as these are really useful to persuade the contents from the bottom of a jar.
Aim for an ergonomic design where the handle is deliberately easy to use and the designer has hit on the right balance between strength and flexibility
Heat resistance
Check the manufacturer’s instructions but the majority of silicone spatulas are heat resistant to over two hundred degrees. This means you can leave them in hot food whilst it is cooking on the hob.
However, some people just use their spatulas for baking and so the maximum heat resistance is not so important.
Material
Aim for food-grade and BPA free silicone which is odourless and taste-free. If it is manufactured as one seamless piece then it will also be ultra-hygienic as there will be no cracks or splits for dirt to lodge in.
