The best bakeware is usually made from anodised aluminium, carbon steel or silicone. Almost all materials will have a layer or two of non stick coating.
Anodised aluminium is durable and strong, resistant to abrasive cleaning materials and offering even heating. Carbon steel is hard wearing yet lightweight. This is arguably the best material for pastry baking thanks to its great heat conductivity.
Another popular choice is silicone, which is lightweight, flexible and durable. Silicone both heats and cools quickly, so your tart will stop cooking as soon as it is removed from the oven. Silicone bakeware can normally be cleared in the dishwasher.
Quality bakeware should last for years and, provided you purchase from a reputable manufacturer, you should have no issues with durability. Carbon steel is arguably the most durable of bakeware materials, but ensure you clean and store it according to the manufacturer’s recommendations.
